I recently cleared out my garden and finally had to say good bye to my spinach plant. It had a long and fruitful life, but had become so mutated that it was really had to go. If course, I harvested all the spinach before throwing it away….which meant a lot of cleaning and inspecting leaves. I found this recipe for a spinach rice bake ages ago and was intrigued by the rice – which looked very green. Mine didn’t turn out so green (I think I didn’t cut the spinach finely enough) but it was still delicious!
